    Mini Cheesecakes - Low Carb

    List of Ingredients

    • 3 (8 oz.) pkgs. cream cheese, softened
    • 3 eggs
    • 2 t. vanilla
    • 1 t. lemon juice
    • TOPPING:
    • 1 c. sour cream, room temperature
    • 2 packets Splenda
    • 1 t. vanilla


    1. Preheat oven to 350 degrees.
    2. Beat all ingredients until creamy. Pour into muffin papers, filling to 3/4 full. Bake for 15-18 minutes at 350 degrees.
    3. TOPPING:
      Mix all topping ingredients together. Put one teaspoonful on top of each mini cheesecake. Spread around to cover entire cheesecake. Place back in oven for an additional 3-5 minutes.
