GF Peanut Butter Cookies

I got this recipe from Jean Peter after we found out Hendrix has Celiac’s Disease. She has been making these for year and said they were the best peanut butter cookies ever. We all agree!
List of Ingredients
2 cup creamy peanut butter
2 cup white sugar
2 teaspoon baking powder
Preheat oven to 350° degrees F. Line cookie sheets with parchment paper.
Cream the peanut butter and sugar in a bowl by hand. Beat in the baking powder. Add the egg and mix until it is all well combined.
The dough will be sticky, so be prepared to get your hands messy. Roll some dough into a ball. I made mine approximately 1 inch. Roll the ball into white sugar and place on prepared cookie sheet. Press down slightly with a fork to make indentation.
Bake for 10 minutes. Take the tray out of the oven and let the cookies rest for at least five minutes. Then carefully transfer them to a cooling rack. Cool completely.
