    List of Ingredients

    • 1-1/4 c. flour
    • 3/4 t. baking soda
    • 1/2 t. baking powder
    • 1/2 t. salt
    • 1/4 c. shortening
    • 1/4 c. butter
    • 1/2 c. sugar
    • 1/2 c. brown sugar
    • 1 egg
    • 1/2 t. vanilla
    • 1/2 c. crunchy peanut butter


    1. Preheat oven to 350 degrees
    2. In bowl mix flour, baking soda, baking powder, and salt. Set aside.
    3. In another bowl, beat shortening, butter and sugars until smooth. Beat in egg, vanilla and peanut butter. Work in dry ingredients until dough is well mixed.
    4. Divide dough in half, wrap in plastic wrap and chill several hours or over night.
    5. Roll dough into 1 inch balls and place 3 inches apart on greased cookie sheet. Flatten by scoring tops with a crisscross pattern with the tines of a fork, dipping fork in water each time to prevent sticking to dough.
    6. Bake cookies at 350 degrees for 10 minutes.

      Makes 3 dozen.
