    List of Ingredients

    6 strips bacon, cooked crisp and crumbled
    Reserve 1 T. bacon fat
    1 lb. great northern white beans, cooked & drained
    OR 4 (16 oz.) cans of great northern beans, drained
    1 T. olive oil
    1 onion, diced
    1 stalk celery, diced
    2 carrots, diced
    2 cloves garlic, minced
    2 potatoes, peeled & cubed
    2 T. tomato paste
    1 chipotle pepper in adobo sauce, minced
    6 c. chicken stock
    Salt & pepper to taste


    Heat reserved bacon fat and olive oil in large soup pot. Add onions, celery and carrots. Season with salt and pepper; saute until onion is softened. Add garlic and saute for another minute or two. Stir in the tomato paste and chipotle pepper, mix well. Add the chicken broth and potatoes. Bring to a boil, reduce heat, season with salt and pepper, simmer for 15 minutes. Add the beans and bacon, simmer for another 15-20 minutes.
