    List of Ingredients

    • 2 c. chopped onions
    • 2 c. chopped celery
    • 2 cloves minced garlic
    • 2 T. vegetable oil
    • 6 (14 oz.) cans beef broth
    • 1 (24 oz.) pkg. Reames frozen egg noodles
    • 2 c. sliced carrots
    • 1/2 t. salt
    • 1/2 t. pepper
    • 1 bay leaf
    • 1 (16 oz.) pkg. frozen meatballs
    • 1 (28 oz.) petite diced tomatoes
    • 1/4 c. snipped fresh parsley


    1. In large pot, cook onion, celery and garlic in hot oil over medium heat until tender. Add beef broth, bring to a boil. Add frozen noodles, carrots, salt, pepper and bay leaf. Return to boil and cook 10 minutes. Add metballs, return to a boil. Reduce heat and continue cooking 10 - 15 minutes or until noodles and vegetables are tender and meatballs are heated through. Add tomatoes and parsley, heat throughly.
