Bread Pudding - 4 pts

1 1/4 c. low-fat (1%) milk
4 large eggs
1/3 c. sugar
2 tsp. vanilla extract
1/2 tsp. cinnamon
1/8 tsp. ground nutmeg
12 slices cinnamon-raisin bread, crusts discarded, bread cut into 1-inch squares
1 Granny Smith apple, peeled, cored, and cut into 1/2-inch pieces
3 Tbsp. chopped pecans
1. Preheat oven to 350. Spray a 1 and 1/2 quart baking dish.
2. Combine first 6 ingredients; whisk til blended. Add bread, apple, and pecans. Let stand, stirring occasionally until bread absorbs some of the liquid, about 10 min. Pour into baking dish.
3. Bake until pudding is puffed and knife comes out clean, about 25-30 min. Remove from oven and let cool 15 min. Serve warm.
