4 (4 ounce) boneless, skinless chicken breast
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 pint grape or cherry tomatoes
1/4 cup fresh lemon juice
12 green olives, pitted and coarsely chopped
2 large garlic cloves, finely chopped
1/4 cup water
1. Preheat the oven to 400 degrees. Spray a 9 x 13" roasting pan with nonstick spray. Place the chicken in the roasting pan. Sprinkle the chicken with salt and pepper; spray with nonstick spray.
2. Combine the next five ingredients in a small bowl; pour over the chicken.
3. Roast the chicken 20 minutes, then baste with the tomato mixture and roast 20-25 minutes longer. Divide chicken and tomato mixture into four servings.
