    Beef Filet w/ Wild Mushrooms & Red Wine Sauce

    List of Ingredients

    6-8 lb. beef filet
    2 Tbsp. oil
    1-1/2 cups red wine
    1/2 cup butter
    1-1/2 lb. wild mushrooms, sliced (use shiitake, porcini or any other wild-type mushroom)
    1/4 cup Dijon style mustard
    1-1/2 cup heavy cream

    Recipe

    Brush the meat with oil and brown meat on all sides in a hot frying pan. Transfer the browned meat to a roasting pan and roast for 25 minutes. Remove the filet to a heated serving platter and keep warm.

    Meanwhile, saute mushrooms in butter. Heat the roasting pan, stir in wine and deglaze the pan, boiling the wine until it is reduced by half. Melt the butter in a saucepan, stir in mustard and cream and boil for five minutes. Stir into reduced wine and heat through. To serve, slice the filet, drizzle with sauce and place mushrooms around the filet on the platter.

    YIELD: 10-12 Servings
