    Cornbread: Pepper Jack Cornbread

    List of Ingredients

    2 cups self-rising corn meal mix*
    1 Tbsp. sugar
    1/4 tsp. baking soda
    1 1/2 cups buttermilk
    1 egg
    1/4 cup oil
    1/3 cup onion, finely chopped
    1 1/2 cups pepper jack (Monterey Jack Jalape�o) cheese, finely chopped

    Recipe

    Combine corn meal mix, sugar and soda. Add buttermilk, egg, oil, onion and cheese. Stir until well blended. Pour batter into greased 9-inch square pan. Bake 25 to 30 minutes or until well browned.

    *If corn meal mix is not available, substitute:
    1 1/2 cups corn meal, 1/2 cup all-purpose flour, 1 tablespoon baking powder and 1 teaspoon salt.
