This is a really good side dish. Great for any pot luck meal.



List of Ingredients




2 lbs. fresh zucchini, sliced
1 t salt
1 med. onion, finely chopped
� c butter, melted
1 can cream of chicken soup
1 can sour cream
1 - 8 oz pkg. herb seasoned
stuffing mix


Recipe




Cover the zucchini and salt with water and heat to just boiling, in a pan. Remove from heat and drain well. Saut� the onion in butter until tender. Add the soup and sour cream to the onions. Fold in the cooked zucchini. Alternate layers of the stuffing mix and zucchini mix in a 9x13 pan. Bake at 350� uncovered for 25 minutes.
