    Fried Tortellini

    List of Ingredients

    11/2 quarts vegetable oil, for deep frying
    1 16-oz box dried tortellini
    1 cup pesto, homemade or jarred,
    or 2 cups marinara sauce, homemade or jarred, for dipping


    In a large saucepan or deep-fat fryer, heat vegetable oil to 3500 on a deep-fat
    thermometer. Add uncooked tortellini in batches without crowding and cook until blisters
    form on the surface of the dough like an eggroll and color is golden brown, 2 to 3
    minutes. Drain on paper towels. Serve hot, with pesto or marinara sauce for dipping.
