    Pimento Cheese Croquettes

    List of Ingredients

    1 cup shredded mozzerlla cheese
    1/2 c shredded cheddar cheese
    1 jar drained diced pimentoes
    1/4 diced green onions
    1/4 t worchestershire sauce
    1/4 t bottled hot pepper sauce
    1/2 t salt
    1/4 c mayo
    3/4 c pluc 1/3 cup flour divided
    3/4 t baking powder
    1/4 c milk
    1 t veggie oil


    Combine cheeses, pimentoes, gree onion, worchestershire sauce, hot pepper sauce, salt and pepper and mayo adding 3/4 c flour graually until dough is stiff and can be handled without sticking. Set aside.

    IN a small bowl combine rest of flour, baking powder, dash of salt, 1/4 c warm water, milk and veggie oil and beat until smooth.

    With a Tablespoon measure and shape cheese mixture into shape of a walnut. Dust all sides in flour, dip into batter and drain excess. Deep Fry a few at a time at 400 degrees for 3 to 5 minutes. Drain and serve.
