Susanna's Broccoli Bites
List of Ingredients
4 cups raw broccoli, cleaned
1/2 sweet onion, chopped
1 cup shredded, cheese (I Used cobly and the horseradish cheese I got)
2/3 cup mayo
1/2 tsp nutmeg
salt and pepper to taste
Egg for breading
(if you don't have the horseradish cheddar cheese I have then use colby and cheddar and add about 4 or 5 T of parmesean cheese)
Put your broccoli in a bowl and add 1/2 cup water. Cover with plastic wrap and put in micro for 4 minutes to steam.
Put roughly chopped onion and broccoli in food proccessor and pulse to get texture but rather small pieces.
Put in bowl and add mayo, cheeses, nutmeg, salt and pepper, egg and mix well. If you need more binding add a little more mayo.
Using a cookie scoop .. or teaspoon, get a ball of mixture and dip in breadcrumbs and then egg and breadcrumbs again. It will stick better and make a better coating if you do it that way. I tried flour it didn't work as well. Chill for 2 to four hours for easier frying. It can be fried immediately but letting it set up helps.
Deep fry carefully until golden brown. Serve with honey mustard or ranch dressing.
Source: This is my own recipe. I wanted to duplicate the recipe at Brennigans but could not get the recipe so I set out to create one that was similar. This is what I came up with.
Do not freeze these. If you do then you must thaw them out before frying them or they will fall apart immediately.
