Autumn Vegetables w Chicken and Rice
List of Ingredients
1 package(s) UNCLE BEN'S® COUNTRY INN® Broccoli Rice Au Gratin
4 chicken breast halves, pounded 1/2 thick boneless
salt and pepper to taste
2 Tbsp. oil
2 carrot(s), peeled,1/2 lbs. julienne strips, ends removed
2 Tbsp. butter or margarine
4 green onions, in 4 sliced in half, lengthwise 1 tsp. tarragon dried
1.Prepare rice according to package directions.
2.While rice simmers, sprinkle chicken with flour, salt and pepper.
3.Cook chicken in oil in 10-inch skillet until golden brown and cooked through, about 4
minutes each side. Move chicken to platter and keep warm.
4.Slice carrots into 4" long julienne strips, grate 1 tbsp of carrot. In same skillet, cook and stir
carrots and green beans in butter for 3 minutes.
5.Slice onions in half lengthwise and cut into 4-inch pieces. Add onions and tarragon to skillet;
cook and stir until onions are crisp-tender.
6.Serve rice in center of platter, sprinkle with grated carrot. Place chicken pieces around rice
and top with vegetable mixture.
