List of Ingredients
1 stick margarine or butter
1 c. quick-cooking oats
1 1/4 c. boiling water
1 c. white sugar
1 c. brown sugar
2 eggs
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. nutmeg
1 tsp. cinnamon
Topping:
6 TAB margarine
1/2 tsp. vanilla
3/4 cup chopped pecans
Recipe
Place butter, oats and boiling water in a bowl. Stir and set aside for 20 minutes. Combine remaining ingredients and then blend with oat mixture. Pour in a 9 1/2 x 12-inch pan and bake for 40 minutes in a 375 degree oven. For a topping, combine 6 tablespoons of margarine, 1/2 teaspoon of vanilla and 3/4 cup of chopped pecans. Spread this topping on top of hot cake. Place cake under a broiler until the margarine melts (about 1 or 2 minutes).
