    ~Walnut Encrusted Salmon~

    List of Ingredients

    1 pound dalmon, boneless and skinless
    Salt and pepper to taste
    4 (Cedar) grilling planks

    Walnut Crust

    - 1/2 bunch parsley, leaves only
    - 1 stalk green onion
    - 1/2 cup walnuts
    - 1 teaspoon olive oil
    - 1 teaspoon lemon juice

    Recipe

    Soak grilling planks in liquid for at least one hour. Cut salmon into 4 serving size pieces. Pat salmon dry with paper towel. Lay one salmon serving on each grilling plank. Sprinkle salmon with salt and pepper.

    Finely chop parlsey, onions, and walnuts. Mix all crust ingredients in a small bowl. Evenly spread walnut crust over top of each piece. Gently press crust into fish. Place grilling planks on grill using indirect heat. Check cooking progress after 15 minutes.

    Grill until internal temperaure reaches 145 degrees F.

    HINT: Capture more smoke flavor by covering plank while grilling.
