Recipe Introduction
1 whole quesadilla is 4 pt.
List of Ingredients
1 1/4 cups salsa, divided
1 cup chopped chicken breast (Can use canned chicken)
2 tbsp. chopped fresh cilantro (or 1 tbsp. dried cilantro)
1 tsp. ground cumin
1 (4.5 oz) can chopped green chiles, drained
6 (7 inch) flour tortillas
1 cup (4 oz.) shredded reduced-fat sharp cheddar cheese
cooking spray
Recipe
1. Combine 1/2 cup salsa, chicken and
next 3 ingredients.
Spoon mixture evenly onto 1/2 of each tortilla.
Sprinkle with cheese.
2. Coat a nonstick skillet with cooking spray;
place over medium-high heat until hot.
Add 1 tortilla, cook 1 minute.
Fold in halk, cook 30 seconds.
Turn quesadilla over; cook 30 seconds.
Repeat with remaining tortillas.
