Pumpkin Pie Power Bites

Makes: 22 bites
1 cup pitted Medjool dates (about 8 large)
1/2 cup pumpkin puree
3 tablespoons honey
1/4 cup peanut butter (can use almond or sunflower seed butter)
1 teaspoon pumpkin pie spice
1/2 teaspoon pure vanilla extract
1/4 teaspoon sea salt
1 1/2 cups old-fashioned rolled oats (not quick-cooking)
1/2 cup ground oats (processed in food processor or in a coffee grinder)
2 Tablespoons ground flaxseed
1/3 cup semi-sweet chocolate chunks
Place dates in the bowl of a food processor and process until dates form a sticky ball. Add the pumpkin puree, honey, peanut butter, pumpkin pie spice, vanilla extract and sea salt. Process again until smooth, stopping to scrape the sides as needed. When well combined, transfer mixture to a large bowl and add both ground and rolled oats, ground flax seed and chocolate. Stir until everything is combined. Cover and chill mixture in the fridge for at least 30 minutes. Roll mixture into bites using about 1 tablespoon of dough and place on parchment or waxed paper. Cover and refrigerate. Power bites will keep for a week in the fridge or up to 3 months in the freezer if stored in an airtight container or food storage bag. Recipe
