    This is a dense cake which can be cut into bars.

    List of Ingredients


    15 oz pumpkin puree
    2 cups large oat flakes
    10 Medjool pitted dates
    3 tsp pumpkin pie spice
    3/4 cup water


    Place 1.5 cups large oats in any blender to pulverize into flour. A food processor is not as efficient.



    Chop dates and soak in water for 15 minutes.
    Blenderize 1.5 cups large oats into a flour.
    Reserve 0.5 cup large oats whole.
    Blenderize the dates with the water they soaked in.
    Combine date puree and oat flour and oats whole and mix.
    Add the mixture to the pumpkin puree and mix.
    Line an 8" x 12" pan with parchment paper.
    Pour in the mixture and flatten.
    Bake 45 minutes at 375F. Turn oven off but leave the pumpkin bars in the oven for another 15 minutes.
    The top cracks a little when they are done.
    Remove from oven, slide the Pumpkin Bars onto a plate and refrigerate for one hour.

    Makes 20 pieces 2" x 2".
