    Speedy Salmon Cassarole

    List of Ingredients




    1 Tbsp butter
    1 Tbsp flour
    3 Tbsp ketchup
    1/2 cup milk
    1 can (14-3/4 oz) salmon, drained, flaked and bones removed
    2 cups mashed potato flakes (or 2 cups leftover mashed potatoes)
    1 cup shredded cheddar


    In a saucepan melt butter
    Stir in flour and ketchup till smooth
    Gradually stir in milk; bring to a boil and cook and stir for 2 minutes
    Add salmon
    Prepare mashed potatoes as directed and spoon half into a greased 11x7 inch baking dish
    Top with salmon mixture, remaining potatoes and cheese
    Bake uncovered at 375� for 20 minutes or till heated through and cheese melts
