    This works for all kinds of meat or poultry. Try wild meats like deer, elk or moose. Also consider trying bison.

    24 lbs ground turkey or chicken or blend of the

    7 tablespoons salt 2 tablespoons pepper 1 tablespoon nitrate


    1. Mix well and stuff casings.

    2. Smoke for 3-4 hours until the smell drives you NUTS!

    Smoking is the vital aspect of this sausage so if you can't smoke them, try adding a little bit of liquid smoke before stuffing.
