    Sugar Free Marshmallows

    List of Ingredients

    1 cup Agave Syrup or Maple
    2 envelopes unflavored kosher gelatin
    1 teaspoon vanilla
    6 tablespoons cold water
    1/4 teaspoon salt
    tapioca starch
    9x12 pyrex dish


    Add gelatin to water and microwave for 30 seconds on high.

    Add syrup, vanilla and salt.

    Using Agave syrup adds the sweetness, but these marshmallows are still sugar free.

    Beat with an electric mixer for 12 minutes until the marshmallows are very thick and tripled in size.

    Pour marshmallows into a 9x12 inch pyrex dish coated in cooking spray and dusted with tapioca starch.

    Let marshmallows cool for at least three hours, or overnight.

    Cut marshmallows with a wet knife into squares.

    Serve as is, in hot cocoa, or use to make crispy rice treats.

    These sugar free marshmallows will be a hit wherever you take them.
