    List of Ingredients

    • 2 1/4 cups all-purpose flour
    • 2/3 cup honey-crunch wheat germ
    • 1/4 teaspoon baking soda
    • 1/2 cup uncooked rolled oats, finely ground
    • 1/2 cup packed brown sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/2 stick margarine, softened
    • 1/2 cup egg substitute
    • 1/3 cup walnuts, chopped
    • 1 teaspoon vanilla extract
    • 2 ripe bananas, mashed
    • 3/4 cup Vanilla Ensure


    1. Preheat oven to 350 F.
    2. In a large bowl, mix flour, wheat germ, baking soda, rolled oats, brown sugar, baking powder and salt with pastry blender. Cut in margarine until mixture resembles coarse crumbs.
    3. Stir in egg substitute, walnuts, vanilla extract, bananas and Ensure until flour mixture is moistened.
    4. Line 15 muffin cups with paper liners. Fill almost to the top with batter.
    5. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
