    List of Ingredients

    • 1 3/4 cup whole-grain wheat flour
    • 1 cup blueberries
    • 1/2 tsp ground cinnamon
    • 1/2 tsp table salt
    • 2 tsp baking powder1/2 tsp baking soda
    • 1 egg
    • 3 Tbsp butter
    • 1/4 cup packed light brown sugar
    • 1 cup buttermilk
    • 2 tsp lemon zest


    1. Wash & drain blueberries. Sprinkle w/ 1/4 c flour.

      Sift together remaining flour, baking powder, baking soda, salt, & cinnamon.

      Cream the butter (softened) and sugar. Beat in the egg. Add buttermilk.

      Add the milk mixture and dry ingredients. Fold in the lemon zest and blueberries.

      Spoon into muffin cups (either paper lined or PAM sprayed). Bake @ 375 fro 15-20 minutes or until a toothpick inserted in center comes clean.
