    List of Ingredients

    1 8oz pkg cornbread mix
    1 egg
    1/3 cup skim milk
    1 pound ground chicken breast
    1 medium onion
    1 pkg dry Chili Seasoning Mix
    16 oz can diced tomatoes
    16 oz can yellow corn
    16 oz can black beans (not refried)
    1 cup low-fat shredded cheddar cheese
    1 cup salsa


    Mix cornmeal, egg and milk in large bowl.

    Spray skillet with non stick spray, and brown chicken breast and diced onion, breaking up the chicken finely. Drain corn, tomatoes and beans and add them to the chicken and onions. Add one packet of dry chili seasoning mix and stir until all ingredients are combined.

    Add chicken and vegetable mixture to cornbread batter and mix well. Mixture should be pourable (cake batter consistency); if it's too thick, add a couple tablespoons of skim milk.

    Pour into slow cooker and cook on high for 1 hour, then on low for 3 hours. Top each serving with salsa and/or shredded cheese.
