    3/4 cup canned pumpkin ( NOT canned pumpkin pie MIX!)

    pumpkin pie spice- to taste

    Splenda-to taste

    Low-fat/fat-free vanilla ice cream ( i usually use Breyer's Double Churned Sugar Free)


    mix pumpkin, pumpkin pie spice, and Splenda together; add to slightly soft ice cream, mix well, and ENJOY!!!

    i usually just mix up one can of pumpkin, Splenda, and spice, keep it in a container, and add it to a serving of ice cream.
    i also intend to try a fat-free/sugar-free vanilla ice cream, as the pumpkin adds a creamy texture.
    the Breyer's DC SF is listed as having 4 gm. fiber/serving (1/2 cup), and the pumpkin has 5 gm. in 1/2 cup, so this is a great option for Core and Flex alike, plus, you can enjoy it year-round! (i do Core)
