List of Ingredients
½ cup chopped onion
3 cups chopped zucchini
1 ¼ cups rolled oats
¼ cup shredded lowfat mozzarella cheese
½ cup egg substitute
½ tsp dried basil or oregano (or both!)
1 tsp pepper
½ cup tomato sauce
Preheat oven to 375 degrees.
Coat an 8 x 12-inch glass baking dish with vegetable spray.
In a mixing bowl, combine onion, zucchini, oats, mozzarella, egg, basil or oregano, and pepper. Mix well. Spread mixture into the greased baking pan. Spread tomato sauce evenly over the top. Bake for 30 minutes or until heated through.
