Mimis Delicious Italian Meatballs

List of Ingredients
- 3 lbs. ground chuck (or similar)
- 2 lbs. ground pork
- 2 lbs. ground veal
- Optional; substitute 1 lb. Italian sausage for 1 lb. ground pork
- 8 large eggs
- 1 large onion, chopped
- 4 sprigs of celery
- 1 green bell pepper
- 1 large bunch of green onions (hand chopped, not fine)
- 10 toes of garlic
- 1-2 large bunches of parsley
- 1 C. half and half
- 1-1 1/2 C. parmesan cheese or combination of parmesan and romano
- 15 oz. seasoned bread crumbs
- 1/4 C. worcestershire sauce (Lea and Perrin)
- 1-1 1/2 C ice water
- salt and pepper to taste
- Tony Chachere's to taste (Cajun seasoning in green container)
Instructions
- Mix liquids and eggs in large bowl.
- Add cheeses and seasonings and mix.
- Add all meats and gently mix with (clean) hands.
- Add bread crumbs and mix gently again.
- For Meatballs: grab small amount of mixture and gently pat and roll into balls and place each ball on a cookie sheet touching each other. Heat oven to 400 degrees and bake for about 15 to 20 minutes or until slightly brown. You can either add Meatballs to a tomato sauce or cool and freeze for a later date.
- For Meatloaf: fill pan.
