Pineapple Cheese Ball

1 pkg. (8 oz.) cream cheese, at room temperature
8 oz. sharp Cheddar cheese, shredded
1 can (8-1/2 oz.) crushed pineapple, drained
1/4 cup finely chopped green bell pepper
2 tbsp. finely chopped onion
2 cups chopped walnuts, divided use
In a food processor or by hand with a fork, beat cream cheese until smooth. Mix in pineapple, green pepper, and onion. Reserve 1 cup of nuts and mix in remaining 1 cup. Shape mixture into a ball, roll it in reserved nuts, refrigerate until well-chilled. Serve with crackers. Makes 10 - 12 servings.
Notes: Use both cream cheese and shredded cheddar cheese, but may use all cream cheese (2 blocks).
