    2 eggs
    3 cups Original Bisquick mix
    1 cup milk
    3 Tbsp. vegetable oil
    1 cup (4 ounces) shredded cheddar cheese
    cup chopped fully cooked ham (about pound)


    Heat oven to 400 degrees. Spray with cooking spray the bottoms and sides of 12-count, regular-sized muffin tin (spray will work better than greasing or using muffin liners). Beat eggs slightly in medium bowl. Stir in Bisquick, milk, and oil until moistened. Stir in cup of the cheese and all of the ham. Divide batter evenly among muffin cups and sprinkle remaining cheese evenly over the tops. Bake 18 to 20 minutes or until light golden brown. Immediately remove from pan and serve warm. Wrap and refrigerate any remaining muffins.

    Makes 12 muffins.
