    Two Cheese Potatoes Gratin

    List of Ingredients

    1 1/2 pounds potato -- cut into 1/4 inch slices

    1 garlic clove

    1/2 teaspoon salt

    1/8 teaspoon red pepper

    1/4 cup Parmesan cheese

    1/4 cup flour

    2 cups skim milk

    5 ounces cheddar cheese -- shredded


    Place potato slices and garlic clove in saucepan and cover with water; bring to a boil and cook 8 minutes or until just tender. Drain and discard garlic. Place flour, salt and red pepper in a large saucepan. Gradually whisk in milk until blended. Cook over medium heat until thick and remove from heat; stir in cheese. Arrange half of potatoes in a baking dish which has been sprayed with nonstick spray. Pour half of sauce over slices. Repeat with remaining potatoes and sauce. Sprinkle with parmesan cheese. Bake at 350 for 25 minutes or until bubbly.
