Catalina Chicken Stir Fry

2 cups instant rice, uncooked
1 pound boneless skinless chicken breasts, cubed
3/4 cup Catalina salad dressing
1/4 cup soy sauce
1/2 teaspoon garlic powder
1 package (16 oz. size) frozen mixed vegetables, thawed, drained
Prepare rice as directed on packages. Cook chicken in dressing, soy sauce and garlic powder for 5 minutes. Add vegetables, cover.
Simmer 5 to 7 minutes or until vegetables are tender, stirring frequently. Serve over rice.
