    Coconut Battered Shrimp

    List of Ingredients

    1 bag frozen large shrimp
    1/2 cup all-purpose flour
    1/2 cup grated coconut
    2 tbsp. baking powder
    Very cold water
    Oil for frying


    1. In a bowl, combine the flour, baking powder and coconut with enough cold water to make a medium-thick batter (the consistency should be like crepe batter)

    2. Dip each thawed shrimp into the batter and immediately lower into the hot frying oil; the batter should puff up; remove as soon as batter is lightly browned

    3. Place on paper towel and repeat until finished Try a dipping sauce made from light fish stock flavored with a little brown sugar and a few drops of chili sauce.
