    Macadamia Nut Bars

    Recipe Introduction

    I created this rich nut bar out of a love for both macadamia nuts and coconut. They appear regularly on our Christmas cookie trays.

    Cookie Base:
    one pkg yellow cake mix
    1 egg
    1/3 cup shredded coconut
    1/2 cup melted butter
    1 cup crisp rice cereal
    One 12 oz. package white chocolate chips
    2 cups mini marshmallows
    1 can coconut-pecan frosting
    2 cups crisp rice cereal
    2 cups chopped macadamia nuts

    Heat oven to 325'. Mix all base ingredients until crumbly and press into a lightly oiled 13x9' baking pan. Bake for 20 minutes.

    In a large saucepan, heat and stir white chocolate chips, marshmallows and frosting until mixture is fairly smooth. Remove from heat and stir in rice cereal and nuts. Spread evenly over cookie base. Allow to cool before cutting into bars.
