    Corny Bacon Casserole

    6 slices bacon diced
    1 med onion chopped
    2 Tbs all purpose flour
    2 cloves garlic minced
    1/2 tsp salt
    1/2 tsp pepper
    1 C sour cream
    3 & 1/2 Cs fresh or frozen corn
    1 Tbs chopped fresh parsley
    1 Tbs chopped fresh chives

    Heat oven to 350. In a large skillet, cook bacon til crisp. Remove to paper towel. Drain, reserving 2 Tbs drippings. Saute onion in drippings till tender. Add flour, garlic, salt & pepper. Cook & stir
    till bubbly. Cook & stir 1 min more. Remove from heat. Stir in sour cream till smooth. Add corn, parsley & half of bacon. Mix well. Pour into a greased 1 quart baking dish. Sprinkle with remaining bacon. Bake uncovered for 20 to 25 mins or till heated through. Sprinkle with chives.
