    Roast Beef Casserole

    List of Ingredients

    • 2c. leftover roast beef, chopped
    • 1 large onion, chopped
    • 1 green pepper, chopped
    • 3 stalks celery, chopped
    • 2T. butter
    • 1 can water
    • 1/2t. salt
    • 1T. soy sauce
    • few drops of Tabasco
    • 1 can cream of mushroom soup
    • 1 can cream of chicken soup


    1. Cook celery, onion, and pepper in 2 T. butter until clear.
    2. Add roast beef and cook several minutes. Stir in soups, water, salt, soy sauce and Tabasco.
    3. Pour in casserole and bake 30 minutes at 325.
    4. Allow 5 or 10 minutes more if it has been refrigerated.
    5. Serve over rice.
    6. This casserole freezes well.
