- 2 egg whites
- 1t. vanilla extract
- 3/4c. packed light brown sugar
- 2c. pecan halves
- Preheat oven to 250.
- Beat egg whites to form soft peaks. Gradually add brown sugar and vanilla, do not underbeat.
- Fold in pecan halves, coating well with the mixture.
- Drop by teaspoonful, 1 inch apart, on a cookie sheet sprayed with non stick spray.
- Bake for 1 hour, turn oven off, and let the cookies stay 1/2 hour longer in the closed oven.
- Makes: 2 dozen
