Slow-Cooked Beef Stew

- 1 lb. bag baby carrots
- 2lb. boneless beef chuck roast, cubed
- 2 large potatoes, cubed
- 1 can condensed cream of tomato soup
- 1 envelope beef stew seasoning mix
- 1c. water
- Cut carrots in half crosswise. Place beef, carrots, and potatoes in slow cooker.
- In a bowl, whisk together the soup, water, and seasoning packet.
- Pour over beef and vegetables. Cover and cook on low for 8 hrs. or high for 4 hrs.
- Makes: about 3 qt.
