    Buttermilk Crumb Cake

    1/2 cup shortening
    1 cup brown sugar
    1/2 teaspoon salt
    2 cups flour
    3/4 teaspoon cinnamon
    1/2 teaspoon ginger
    1 egg
    2 tablespoons molasses
    1 cup buttermilk
    1 teaspoon baking soda

    1 Cream the shortening, sugar, salt, flour and spices. Measure out one cup of this mixture; and set aside. To the remaining, add the egg beaten, the molasses, and buttermilk into which the soda has been stirred. Beat; and transfer to an oiled baking pan, making the mixture an inch deep. Spread the reserved crumb mixture over the top. Bake in a moderately hot oven, 350 to 375 degrees F. for thirty minutes.
