Honey bun kisses

These are a cross between a cookie and a cake with a delicious creamed honey filling. They freeze well wrapped in cling film and are great to throw in the lunch box.
1/2 cup butter
1/2 cup brown sugar
2 tablespoons honey (microwave for a few seconds)
1 3/4 cup self raising flour
Creamed honey for spreading
Cream butter and brown sugar until light and fluffy. Add egg and runny honey and beat well. Mix in sifted flour and salt to make a firm dough. Refrigerate about an hour until mixture is quite firm.
Remove from fridge and roll dough into small walnut size balls. Place on trays allowing room for spreading (do not flatten). Bake in a moderate oven 12 minutes. Remove from oven and place on a wire rack to cool. When cool spread flat side of half the cookies with creamed honey and sandwich with another cookie.
