List of Ingredients
- 1 whole frying chicken
- 1 jar rosemary
- 1c. kosher salt
- The day before serving, clean chicken, removing excess fat.
- Cut both sides of the rib cage from tail to shoulder. Open, using the wing joints as pivots.
- Pound flat with the side of a knife. Place on foil, coat with salt and rosemary on both sides.
- Seal in foil and refrigerate overnight. Cook on the grill.
