Cheesy Broccoli Rice Casserole

This casserole is a nice side dish for a holiday dinner
or any night. Can also be used for a meatless main dish.
List of Ingredients
1 1/2 cups instant rice, uncooked
1/2 cup chopped red onion
2 cups finely chopped broccoli (or 2 10-oz boxes frozen)
1 can (10.75-oz.) reduced fat cream of mushroom soup
6 oz. cheese spread (or pasteurized processed cheese)
1/4 tsp. black pepper
1 (4-oz.) can mushroom stems and pieces, drained
2 Tbsp. light mayonnaise
2 Tbsp. grated cheddar cheese
Preheat oven to 350 degrees F. Cook rice according to package directions. Meanwhile, chop red onion and broccoli.
Microwave onion and broccoli with 2 Tbsp. water for 3 minutes on High. Spray a 2-qt. casserole dish with non-stick spray. Combine cooked rice, vegetables and remaining ingredients, except grated cheese. Stir well. Cover and bake for 25 minutes. Uncover, top with grated cheese and bake another 5 minutes or until cheese melts.
