    Pumpkin Gingerbread Cake

    List of Ingredients

    3 1/2 cups all-purpose flour
    1 Tbsp. Baking powder
    2 1/2 tsp. ground ginger
    1/2 tsp. each baking soda, salt and all spice
    1/2 cup canola oil
    1 cup granulated sugar
    1/2 cup packed brown sugar
    4 eggs
    1 16-ounce can solid pack pumpkin
    1/2 cup dark molasses
    1 1/2 cup applesauce


    Combine dry ingredients in medium bowl. Beat oil and sugars in large mixer bowl until light and fluffy. Add eggs, two at a time, beating well after each addition. Add pumpkin, molasses and applesauce; beat well. Add dry ingredients; mix until well blended. Spoon batter into well-greased and floured 12-cup Bundt pan. Bake in preheated 350 degree oven 1 hour or until wooden pick comes out clean. Cool on wire rack for 15 minutes; remove from pan. Dust with powder sugar. Slice into 16 slices.
