    Pressure Cooker Lemon-Thyme Chicken

    Recipe Introduction

    This light, herb-kissed dish takes less than 15 minutes to prepare.

    2 tablespoons oil
    3 pounds chicken, skinned and cut into pieces
    Salt and pepper
    1 teaspoon dried thyme
    3 cloves garlic, minced
    1 cup chicken broth
    1/2 cup white wine
    juice of 1 lemon
    lemon slices, for garnish

    Heat the cooker, add the oil and brown the chicken pieces.
    Season the chicken with salt and pepper and thyme.
    Sprinkle the garlic on the chicken.
    Combine the remaining ingredients, except the lemon slices, and pour over the chicken
    Close the cover and place the pressure regulator on pipe, cook for 8 minutes with pressure regulator rocking slowly.
    Cool cooker at once with cool water over the top. Thicken the sauce if desired. Garnish with lemon slices.
