1/2 bushel tomato
3 lb. onions
2 garlic bulbs
1 pt. safflower or olive oil
1/2 c. honey
1/4 c. salt
1 Tbsp. Italian seasoning
4 (12 oz.) cans tomato paste
Cook tomatoes, onion and garlic bulbs with tomatoes, until
onions are soft.
Put through food mill and let sit overnight.
Next day, drain water.
Add oil, honey, salt, Italian seasoning and tomato paste.
Simmer until thick, about 5 hours.
Pour hot mixture into hot sterilized pint jars.
Seal and process in boiling water bath for 30 minutes.
One pint makes 2 pizzas.
May also freeze in 1 cup container.
Makes about 20 pints.
Takes awhile but is delicious on spaghetti and lasagna too!
