    Give your grilled cheese sandwich an Italian twist by using mozzarella cheese and sautéing it in olive oil. Thinly sliced vegetables add flavor, color, and a bit of crunch. To get the zucchini just right try slicing it length-wise with a vegetable peeler.

    List of Ingredients

    2 slices bread – whole wheat or white
    Salt and pepper to taste
    5 1/4-inch slices fresh mozzarella cheese
    2 tablespoons extra virgin olive oil
    Thinly sliced vegetables like zucchini, tomato, red onion, and basil

    Lay one slice of bread flat. Top it with a thin layer of mozzarella cheese. Sprinkle with salt and pepper.
    Add whichever vegetables you're using. Sprinkle again with salt and pepper and one more slice of mozzarella. Cover with the second slice of bread.
    In a medium-sized skillet, heat the olive oil over medium-high heat. Add the sandwich to the pan and sauté until golden brown. Flip the sandwich and sauté until the cheese is melted and the bread is golden brown on both sides.
    Remove from the pan and serve.
