    Pineapple Salsa


    List of Ingredients


    • 2 cans crushed pineapple w/juice
    • 2 onions, cut into 1/4-inch dice
    • 1 red bell peper, roasted, seeded and cut into 1/4-inch dice
    • 4 cloves of garlic, minced
    • 2 Tbls finely minced ginger
    • 1 cup currants
    • 1 tsp red chili pepper flakes
    • 1 tsp salt
    • 1/4 tsp ground cinamon
    • 1 cup (packed) light brown sugar
    • 1/2 cup cider vinegar


    Instructions


    1. Bring all ingredients to a boil.
    2. Reduce to med. heat and simmer for 30 min.
    3. Let cool to room temperture.
    4. Refrigerate, covered.
    5. Serve with pork, fish or poultry


    Final Comments


    May be searved hot, cold, or at room temperature.
