    New Mexico Nine-Layer Dip

    List of Ingredients

    1 can Jalapeno bean dip
    3 avocado -- soft
    2 tablespoons lemon juice
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1 cup mayonnaise
    1 cup sour cream
    1 Package taco seasoning mix
    4 medium tomato -- ripened
    10 black olives
    3 medium scallion
    8 ounces cheddar cheese -- grated
    Tortilla chips


    Spread bean dip over bottom of 10 inch dish (spring form pan works well)
    Put avocado, lemon, salt and pepper into blender until well mixed.; spraed over bean dip layer
    Mix taco seasoning, reserving at least one tablespoon since it is too much, sour cream and mayonaise and spread over avocado mixture.
    Place tomatoes, olives, scallions over top and garnish with cheese
    Serving Ideas : Serve with any Mexican chip or bread sticks
    This dip should not be made too far ahead as it does not keep well; the avocado will turn brown overnight
