Southwest Potato Topper

Makes 4 servings (1/3 cup each)
1 container (8 ounces) ColomboŽ nonfat plain yogurt
1/4 cup medium salsa
1 tablespoon chopped red or yellow bell peppers
1 medium green onions, chopped
1. Stir together all ingredients except potatoes.
2. Serve over hot baked potatoes.
To Bake Potatoes: Heat oven to 375°F. Gently scrub potatoes, but do not peel. Pierce potatoes several times with fork so steam can escape while potatoes bake. Bake 1 hour to 1 hour 15 minutes or until potatoes feel tender when pierced in center with fork.
