    Red Pepper Corn Tortillas

    1/4 cup of chopped onion
    1/2 cup of chopped red bell pepper
    1/4 cup of fresh or thawed red bell pepper
    1/4 cup of fresh or thawed frozen corn kernels
    1/4 teaspoon of ground black pepper
    2 tablespoons of nonfat prepared salsa
    4 medium or large corn tortillas, warmed to soften

    Preheat your oven to 400� F. Combine the onion, bell pepper, corn, and black pepper. Toss together. Place 1/4 cup of vegetables and 1 teaspoon of salsa on each tortilla and roll up. Arrange the tortillas on a nonstick baking sheet and bake until heated through, about 10 minutes. Serve warm.
